Ingredients:

• 2 cups – raw Rice
• 1/4 cup – grated Coconut
• 1 tbsp – Red Chilli powder
• 4 cups – shredded Pumpkin
• 1 – Onion
• 1 tsp – Mustard Seeds (optional)
• 1 tsp – Cumin seeds (optional)
• Salt to taste

Method:

  1. Soak the rice for about 4 hours.
  2. Grind it to a smooth paste along with coconut, chilli powder and shredded pumpkin.
  3. Add salt. Keep it covered for about 5 to 6 hrs or over night.
  4. Heat oil in a pan.
  5. Season with mustard and cumin seeds.
  6. Add finely chopped onion and saute for a few minutes till the onion becomes translucent.
  7. Add this to the dosa batter.
  8. Heat a dosa tawa, smear with oil and make dosas.
  9. Serve hot with the chutney or sambar of your choice.
