Ingredients:

• 250 g – medium Brinjals
• 1 – large Onion (grated)
• 2 tsp – Ginger paste
• 2 tbsp – Garlic paste
• Salt and chilli powder to taste
• 2 tsp – coriander powder
• 1 tsp – cumin powder
• 1/2 tsp – Turmeric powder
• 1 tsp – Garam Masala
• 3 – large Tomatoes (grated)
• 3 tbsp – cooking oil
• For garnishing:
• few Green chillies and Coriander leaves

Method:

  1. Wash and wipe the brinjals.
  2. Make long slits and stuff the masala in it.
  3. Heat the ghee in the kadai and arrange the stuffed brinjals, side by side.
  4. Cover and cook till one side is cooked.
  5. Turn and cook the other side gently.
  6. When almost cooked, add grated tomatoes and cook till they are soft.
  7. Fold in chopped green coriander leaves and serve immediately.
