
Ingredients:
• 250 g – medium Brinjals
• 1 – large Onion (grated)
• 2 tsp – Ginger paste
• 2 tbsp – Garlic paste
• Salt and chilli powder to taste
• 2 tsp – coriander powder
• 1 tsp – cumin powder
• 1/2 tsp – Turmeric powder
• 1 tsp – Garam Masala
• 3 – large Tomatoes (grated)
• 3 tbsp – cooking oil
• For garnishing:
• few Green chillies and Coriander leaves
Method:
- Wash and wipe the brinjals.
- Make long slits and stuff the masala in it.
- Heat the ghee in the kadai and arrange the stuffed brinjals, side by side.
- Cover and cook till one side is cooked.
- Turn and cook the other side gently.
- When almost cooked, add grated tomatoes and cook till they are soft.
- Fold in chopped green coriander leaves and serve immediately.
