Ingredients:
• 2 cups – fresh field beans
• 2 tbsp – sesame oil
• 1/2 tsp – Cumin seeds
• 4 tbsp – finely chopped Onion
• 1 tsp – finely chopped Garlic
• 1 tsp – finely chopped fresh Ginger
• 1 tsp – sambar powder
• 1 tsp – salt
• 1 – Lime juice
• 2 tbsp – finely chopped fresh Coriander leaves
• To prepare the tawa toast
• 4 – bread slices
• Unsalted Butter as required
Method:
- Boil field beans in enough water adding a pinch of salt. Drain the cooked beans and keep aside.
- Crush the ginger and garlic together and keep aside.
- Heat oil in a pan and add cumin seeds.
- When the seeds puff up add the crushed ginger and garlic.
- Add the finely chopped onion and fry till they become golden in colour.
- Keep a low flame and add the sambar powder and salt.
- Retain one tbsp of beans and stir the rest into the pan.
- Mash the retained beans with one tbsp chopped coriander leaves using a mixer.
- Add the mashed coriander and beans mixture to the kaalu in the pan and stir well.
- Cook till curry becomes thick.
- Mix in the lime juice and the remaining coriander leaves.
- Spread the curry on toast and serve.
