
Ingredients:
• For Bread Koftas:
• 6 – Bread slices (soaked and squeezed)
• 2 – Potatoes
• 1 – Onions (chopped)
• 2 – Green chillies (chopped)
• Salt
• 2 tbsp – Mint leaves (chopped)
• For Spinach Curry:
• 1small bunch Spinach leaves
• 1 – Onion (chopped)
• 1 – Tomato (chopped)
• 1 tsp – Ginger Garlic paste
• 1 tsp – Coriander powder
• 1/2 tsp – Cumin seed powder
• 3/4 tsp – Red Chilli powder
• Salt
• Oil
• 1/2 tsp – Cumin seeds
Method:
- Heat oil, saute the chopped onions with salt and cook until onions turn translucent.
- In a bowl, mixie bread slices, potatoes, sauteed onions, chopped green chillies and chopped mint leaves.
- Meanwhile, heat the paniyaram pan with a few drops of oil.
- Shape the mixture into round balls and drop gently into the paniyaram pan. Cook till both sides turn golden brown. Set aside.
- Cook the cleaned and chopped spinach leaves with 1/2 cup water in microwave oven for 5 minutes on high.
- Meanwhile, heat oil and saute the onions and tomato pieces till well done. Cool and grind along with cooked spinach to form a smooth paste.
- Heat enough oil, splutter the cumin seeds, add the ginger garlic paste and saute until the raw smell leaves.
- Add the ground paste with enough water, coriander powder, cumin seed powder, red chilli powder and salt. Cook on simmer for a few minute.
- Then add the prepared bread koftas to the spinach gravy and cook again for a few minutes. Take off heat.
- Serve hot with rotis.
