
Ingredients:
• 200 g – broccoli, chopped finely
• 2 tbsp – butter/oil
• 2 tbsp – sifted flour
• 1/4 tsp – powdered black pepper
• 3/4 cup – Milk
• 4 cups – stock or water
• 1/2 tsp – Celery salt
• 2 tsp – salt
• Cream for garnishing
Method:
- Heat butter or oil in a heavy saucepan. When the butter melts or the oil is steaming, add half the broccoli.
- Turn around a few times, lower the heat and continue sauteeing for about half a minute.
- Add the flour and turn it around until the mixture leaves the sides of the pan.
- Remove from heat and add the stock gradually, stirring all the time to avoid lumps.
- When the mixture cools, blend in a blender.
- Place the pan back on heat and add the remaining broccoli, milk, black pepper and celery salt.
- Cook over high heat, stirring a few times, until it comes to boil. Then simmer over low heat for at least 10 minutes.
- Serve hot garnished with cream.
