Ingredients:

• 20 – Seedless Olives
• For spice powder:
• 1 tsp – Mustard Seeds
• 1 tsp – Fenugreek seeds
• 1/4 tsp – Asafoetida
• 3 tsp – Red Chilli powder
• 1 tsp – Cumin seeds
• For tempering:
• 3 tbsp – Olive oil
• 1/ cup – Vinegar
• 1 tsp – Mustard Seeds
• 3 tsp – Salt

Method:

  1. Heat oil in a pan and fry the seedless olives for 5 minutes. Take off from the oil and keep aside.
  2. To make the spice powder, first splutter the mustard seeds and grind with rest of the spice powder ingredients.
  3. Once done, add the ground powder in oil with red chilli powder and salt while flame’s on simmer and stir continuously.
  4. Once the oil separates from the ground powder, add the vinegar and stir well for 20 minutes on low flame.
  5. Once everything is well cooked add the fried olives. Stir on low flame. Check for salt.
  6. Cool for an hour and store in air-tight container.
