Ingredients:
• 15 – soya bean nuggets
• 400 g – frozen mixed vegetable pack
• 1 – medium Onion
• 4 – Cloves of Garlic
• 1/2 inch – Ginger
• 2 – Green chillies
• 4 tbsp – Tomato puree
• 1/2 tsp – Dhania powder
• 1/4 tsp – Haldi powder
• 1/2 tsp – Garam Masala
• salt to taste
• 1 tbsp – oil
Method:
- Soak soya bean nuggets in hot water for 10 minutes till soft. Squeeze out all the water from the nuggets.
- Place mixed vegetable in microwave on high for 10 minutes.
- Heat oil, fry finely chopped onion, garlic, ginger and green chillies.
- Add dhania powder, haldi powder, garam masala, salt and then add tomato puree. Stir for 3 minutes.
- Add soya bean nuggets and mixed vegetables. Stir and keep it covered on medium flame for 5 minutes.
- To serve, garnish with 1 tbsp curd and finely chopped coriander leaves.
- Goes well with parantha and phulka.
