Ingredients:

• 1 packet – Thai or Chinese noodles (about 170 g)
• As required – water
• 1 tbsp – oil
• 1 – onion, thinly sliced
• 1/4 cup – peas
• 1/2 cup – cabbage, shredded
• 1/2 cup – red bell pepper, sliced
• 1/2 cup – green bell pepper, sliced
• 1/2 cup – yellow bell pepper, sliced
• 2 tbsp – soy sauce
• 1 tbsp – Red Chilli sauce
• To taste – salt
• 1 tsp – peppercorn, freshly ground
• 4 tbsp – vegetable oil
• 1 cup – tofu, cubed

Method:

  1. Heat oil in a non-stick pan, roast tofu pieces for 5-7 minutes, and keep aside.
  2. Boil enough water, add noodles to it, and cook.
  3. When done, drain the noodles, rinse under running water and sprinkle 1 tbsp oil to avoid sticking.
  4. Set aside the noodles.
  5. Heat oil in a pan, add onions, saute a little and then add peas and green chillies.
  6. Stir fry this for a minute.
  7. Add shredded cabbage and bell peppers, and stir for a minute.
  8. Next, add soy sauce, chilli sauce and salt.
  9. Toss well for 2-3 minutes.
  10. Now add boiled noodles, mix well and stir fry for 5 minutes.
  11. Add the fried tofu and crushed peppercorn.
  12. Toss the noodles well and saute for a few more minutes.
  13. Serve hot.
