
Ingredients:
• 1 cup – Ridge gourd peels
• 2 tbsp – Sesame seeds
• 2 – Dry Red Chillies
• 5 – Garlic Cloves
• 1 inch piece – Ginger
• 1 – Tamarind (marble size)
• 2 tsp – Oil
• For Tempering:
• 1/4 tsp – Mustard Seeds
• 1/4 tsp – Urad Dal
• 2 – Curry leaves
Method:
- Wash thoroughly the ridge gourd peels and drain the excess water.
- Heat 1 tsp of oil and fry the ginger, garlic, red chillies and tamarind until they turn brown.
- Add the sesame seeds immediately, fry them until they change colour and keep aside.
- Stir fry the ridge gourd peels in the same pan until they shrink a bit and let them cool.
- Grind them a bit coarsely with enough salt.
- Heat the remaining oil in a pan, add the mustard seeds, urad dal and curry leaves, let them splutter and add the tempering to the ground chutney.
